Chorizo & Wild Mushroom Sicily Risotto

Directions
- Add 2-3 Tablespoons olive oil to your Jetboil MiniMo. Adjust simmer control spindle to medium heat.
- Add 2-3 Chopped shallots and a chunk of chorizo.
- Stir for 1-2 minutes.
- Add:
4-5 diced mushrooms
4-5 pea pots
1 packet veggie stock concentrate
1 cup water
1/2 cup risotto rice
dash of dried thyme - Simmer until rice is cooked stirring every 1-2 minutes.
- Add 2-3 Tablespoons olive oil and a handful of parmesan cheese. Add 2-3 Tablespoons olive oil and a handful of grated parmesan cheese.
